Weekend Ground Beef Tacos

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 12 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Method

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the ground beef to the skillet and cook, breaking up the meat with a wooden spoon, until browned, about 8-10 minutes.
  3. Stir in the minced garlic, chili powder, ground cumin, smoked paprika, salt, and pepper. Cook for another 2 minutes, until the spices are fragrant and evenly mixed.
  4. Warm the corn tortillas in a dry skillet or microwave them for 30 seconds until pliable.
  5. Assemble the tacos by spooning some ground beef mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, and chopped fresh cilantro.
