Weekend Ground Beef Tacos

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 pound ground beef
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 12 small corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Method
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the ground beef to the skillet and cook, breaking up the meat with a wooden spoon, until browned, about 8-10 minutes.
- Stir in the minced garlic, chili powder, ground cumin, smoked paprika, salt, and pepper. Cook for another 2 minutes, until the spices are fragrant and evenly mixed.
- Warm the corn tortillas in a dry skillet or microwave them for 30 seconds until pliable.
- Assemble the tacos by spooning some ground beef mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, and chopped fresh cilantro.
