Weekend Baked Beef Tacos

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup tomato paste
- 12 small corn tortillas
- 1 cup shredded cheddar cheese
- Flaky sea salt, to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Method
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
- Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 8-10 minutes.
- Stir in the ground cumin, paprika, salt, pepper, and tomato paste. Cook for an additional 2 minutes, mixing well until combined.
- Wrap the corn tortillas in aluminum foil and warm them in the oven for about 5 minutes to make them pliable.
- Spoon a portion of the beef mixture onto each tortilla, sprinkle with cheddar cheese, and fold them in half.
- Arrange the filled tortillas in a baking dish. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and the tortillas are slightly crisp.
- Remove from the oven, sprinkle with flaky sea salt, and garnish with fresh cilantro. Serve with lime wedges on the side.
