Vietnamese Coconut and Sesame Bars

Ingredients
- 1 cup unsweetened shredded coconut
- 1/2 cup white sesame seeds, toasted
- 1/2 cup granulated sugar
- 1/4 cup honey
- 2 tablespoons unsalted butter
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Method
- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
- In a medium saucepan over low heat, combine the sugar, honey, butter, and salt. Stir until the sugar dissolves and the mixture is smooth.
- Remove from heat and stir in the vanilla extract, shredded coconut, and toasted sesame seeds until well combined.
- Pour the mixture into the prepared baking pan, spreading it evenly with a spatula.
- Bake for 20-25 minutes or until the edges are golden brown.
- Remove from the oven and allow to cool completely in the pan on a wire rack.
- Once cooled, lift the bars out of the pan using the parchment paper and cut into 12 equal pieces.
