Vietnamese Coconut and Sesame Bars

These Vietnamese Coconut and Sesame Bars are a perfect go-to dessert for the winter months. With the rich flavor of toasted sesame seeds and the creamy texture of coconut, they offer a delightful balance of flavors. Easy to make, they are a wonderful introduction to Vietnamese sweets.

Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/2 cup white sesame seeds, toasted
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Method

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a medium saucepan over low heat, combine the sugar, honey, butter, and salt. Stir until the sugar dissolves and the mixture is smooth.
  3. Remove from heat and stir in the vanilla extract, shredded coconut, and toasted sesame seeds until well combined.
  4. Pour the mixture into the prepared baking pan, spreading it evenly with a spatula.
  5. Bake for 20-25 minutes or until the edges are golden brown.
  6. Remove from the oven and allow to cool completely in the pan on a wire rack.
  7. Once cooled, lift the bars out of the pan using the parchment paper and cut into 12 equal pieces.
