Vegetarian Rice and Bean Bowl
This vegetarian rice and bean bowl is a comforting dish that's perfect for a cozy winter dinner. Packed with protein and flavor, it's a meal that everyone will love.
Ingredients
- 1 cup brown rice, rinsed
- 2 1/2 cups water
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/4 teaspoon chili powder
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes, with juices
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Method
- In a medium saucepan, combine the brown rice and water. Bring to a boil, then reduce heat to low. Cover and simmer for about 40 minutes, or until rice is tender and water is absorbed.
- While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes.
- Stir in the minced garlic and diced red bell pepper. Cook for an additional 3-4 minutes, until the bell pepper is tender.
- Add the ground cumin, smoked paprika, and chili powder to the skillet. Stir to combine, letting the spices toast for about 1 minute.
- Mix in the drained black beans and the can of diced tomatoes with their juices. Season with salt and pepper to taste. Simmer on low heat for about 10 minutes, allowing the flavors to meld.
- Once the rice is cooked, fluff it with a fork and divide among four bowls. Top each serving with the bean mixture.
- Garnish each bowl with chopped cilantro and a lime wedge. Serve warm.
