Vegetarian BBQ Baby Back 'Ribs'

Ingredients
- 2 cups vital wheat gluten
- 1/4 cup nutritional yeast
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 cup vegetable broth
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 1/2 cups barbecue sauce
Method
- Preheat your oven to 350°F (175°C). Grease a baking sheet or line it with parchment paper.
- In a large bowl, combine the vital wheat gluten, nutritional yeast, smoked paprika, garlic powder, onion powder, and black pepper.
- In a separate bowl, mix the vegetable broth, soy sauce, and olive oil.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough for about 3 minutes until it becomes elastic.
- Shape the dough into a rectangle approximately 1 inch thick. Cut into strips to resemble ribs.
- Place the strips on the prepared baking sheet and bake for 45 minutes.
- Remove the 'ribs' from the oven and brush both sides generously with barbecue sauce.
- Return to the oven and bake for another 30 minutes, basting with more barbecue sauce halfway through.
- Let the 'ribs' cool slightly before serving. Enjoy with additional barbecue sauce on the side.
