Vegan Loaded Grilled Cheese

Enjoy this vegan take on a classic grilled cheese. With gooey plant-based cheese and fresh veggies, it's perfect for any meal.

Ingredients

  • 8 slices whole grain bread
  • 4 tablespoons vegan butter, softened
  • 8 slices vegan cheese
  • 1 large tomato, sliced
  • 1 avocado, sliced
  • 1 cup fresh spinach leaves
  • 1/2 teaspoon garlic powder
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Preheat a large skillet over medium heat.
  2. Spread one side of each bread slice with softened vegan butter.
  3. Place 4 slices of bread, buttered side down, on a clean surface.
  4. Layer each with 1 slice of vegan cheese, tomato slices, avocado slices, and spinach leaves.
  5. Sprinkle with garlic powder, salt, and pepper.
  6. Top with another slice of vegan cheese and cover with the remaining bread, buttered side up.
  7. Carefully place sandwiches in the skillet and cook until golden and crispy, about 4-5 minutes per side.
  8. Press lightly with a spatula to ensure even cooking and that the cheese melts thoroughly.
  9. Remove from skillet, let cool slightly, then slice in half and serve warm.
