Vegan Barbecue Jackfruit Ribs
These delicious vegan barbecue jackfruit ribs offer all the smoky flavors you love without the meat. Perfect for a healthy one-pan dinner any time of the year.
Ingredients
- 2 cans young jackfruit in brine, drained and rinsed
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 1/2 cups barbecue sauce, divided
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon apple cider vinegar
Method
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, smoked paprika, ground cumin, black pepper, and salt. Stir to combine and cook for an additional 2 minutes.
- Add the drained jackfruit to the skillet and cook for 10 minutes, stirring occasionally, until it begins to brown slightly.
- Using a fork, shred the jackfruit into pieces resembling pulled pork.
- Pour 1 cup of barbecue sauce and the apple cider vinegar into the skillet. Mix well and cook for another 5 minutes to allow the flavors to meld.
- Transfer the jackfruit mixture onto the prepared baking sheet, spreading it out evenly.
- Brush the remaining 1/2 cup of barbecue sauce over the jackfruit to coat well.
- Bake in the preheated oven for 30 minutes, or until the edges are slightly crispy and caramelized.
- Remove from the oven and let it cool slightly before serving. Serve warm with your favorite sides.
