Vanilla No-Bake Cupcakes with Buttercream

These vanilla no-bake cupcakes are perfect for a summer dessert without the heat of the oven. With a Mediterranean twist, they feature a hint of orange zest in the buttercream that pairs beautifully with the classic vanilla flavor.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1/4 cup milk
  • 1 cup heavy cream, chilled
  • 1 tablespoon finely grated orange zest
  • Flaky sea salt, to taste

Method

  1. In a medium bowl, combine the all-purpose flour and granulated sugar. Stir until well mixed.
  2. Add the vanilla extract, softened butter, and milk to the dry ingredients. Mix until a smooth batter forms. Set aside.
  3. In a separate bowl, whip the chilled heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the batter until well combined.
  5. Divide the batter evenly into 12 cupcake liners. Smooth the tops with a spatula.
  6. In a small bowl, combine the softened butter for the buttercream, orange zest, and a pinch of flaky sea salt. Mix until smooth.
  7. Spread the orange buttercream over each cupcake. Serve immediately or refrigerate until ready to enjoy.
