Thai Fresh Herb and Mango Salad
This Thai-inspired salad is a perfect way to celebrate the freshness of spring. Combining juicy mango with aromatic herbs and crunchy peanuts, it's a refreshing no-cook dish that's both simple and satisfying. It's perfect as a light lunch or a side dish for a Thai meal.
Ingredients
- 2 ripe mangoes, peeled and thinly sliced
- 1 cup fresh basil leaves, torn
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 1 small red onion, thinly sliced
- 1/2 cup roasted peanuts, roughly chopped
- 1 lime, juiced
- 2 tablespoons fish sauce
- 1 tablespoon palm sugar or brown sugar
- 1 Thai chili, thinly sliced
- Flaky sea salt, to taste
Method
- In a large bowl, combine the sliced mangoes, basil, cilantro, and mint.
- Add the sliced red onion and roasted peanuts to the bowl.
- In a small bowl, whisk together lime juice, fish sauce, palm sugar, and sliced chili until the sugar is dissolved.
- Pour the dressing over the salad and gently toss to combine.
- Season with flaky sea salt to taste and serve immediately.
