Thai Fresh Herb and Mango Salad

This Thai-inspired salad is a perfect way to celebrate the freshness of spring. Combining juicy mango with aromatic herbs and crunchy peanuts, it's a refreshing no-cook dish that's both simple and satisfying. It's perfect as a light lunch or a side dish for a Thai meal.

Ingredients

  • 2 ripe mangoes, peeled and thinly sliced
  • 1 cup fresh basil leaves, torn
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 1 small red onion, thinly sliced
  • 1/2 cup roasted peanuts, roughly chopped
  • 1 lime, juiced
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar or brown sugar
  • 1 Thai chili, thinly sliced
  • Flaky sea salt, to taste

Method

  1. In a large bowl, combine the sliced mangoes, basil, cilantro, and mint.
  2. Add the sliced red onion and roasted peanuts to the bowl.
  3. In a small bowl, whisk together lime juice, fish sauce, palm sugar, and sliced chili until the sugar is dissolved.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Season with flaky sea salt to taste and serve immediately.
