Thai Chicken and Rice Bowl

Ingredients

  • 1 1/2 pounds boneless chicken thighs, cut into 1 inch pieces
  • 1 cup jasmine rice
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 cup mixed bell peppers, sliced
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped

Method

  1. Cook the jasmine rice according to package instructions. Set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the chicken pieces to the skillet and cook until they are no longer pink in the center, about 7-8 minutes.
  4. Stir in the soy sauce, fish sauce, and lime juice. Add the sliced bell peppers and cook for another 3-4 minutes until the peppers are tender-crisp.
  5. Serve the chicken mixture over the cooked jasmine rice. Garnish with chopped fresh cilantro before serving.
