Tender Beef Brisket

Ingredients
- 3 pounds beef brisket, trimmed
- 2 tablespoons olive oil
- 2 large onions, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup water
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
Method
- Preheat your oven to 300°F (150°C).
- Heat olive oil in a large ovenproof pot over medium heat. Sear the brisket on all sides until browned, about 4-5 minutes per side. Remove the brisket and set aside.
- In the same pot, add the sliced onions and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the beef broth, water, tomato paste, dried thyme, salt, black pepper, and bay leaf to the pot, stirring to combine.
- Return the brisket to the pot, ensuring it's partially submerged in the liquid. Cover the pot with a lid.
- Transfer the pot to the preheated oven and cook for 3 1/2 to 4 hours, or until the brisket is fork-tender.
- Remove the pot from the oven and allow the brisket to rest for 10 minutes before slicing against the grain. Serve with the cooking juices.
