Strawberry Tiramisu Cups

This Strawberry Tiramisu is the perfect summer twist on the classic Italian dessert. Fresh strawberries replace the traditional coffee, making it light and refreshing. It's an ideal choice for a warm evening when you want a quick, no-bake treat.

Ingredients

  • 1 pound fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup heavy cream, chilled
  • 1/2 cup mascarpone cheese
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • Mint leaves, for garnish

Method

  1. In a bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Let it sit for about 10 minutes to macerate.
  2. In another bowl, whisk the chilled heavy cream, mascarpone cheese, and vanilla extract together until soft peaks form.
  3. In serving cups, place a layer of ladyfingers, breaking them to fit if necessary.
  4. Spoon a layer of macerated strawberries over the ladyfingers. Follow with a layer of the whipped cream mixture.
  5. Repeat layers until the cups are filled, ending with the cream layer on top.
  6. Garnish each cup with a small spoonful of strawberries and a mint leaf.
  7. Refrigerate for at least 10 minutes before serving to allow the flavors to meld.
