Stir-Fried Winter Greens with Ginger and Garlic

Ingredients
- 2 tablespoons sesame oil
- 1 tablespoon fresh ginger, minced
- 2 cloves garlic, minced
- 4 cups kale, stems removed and leaves chopped
- 3 cups baby bok choy, halved lengthwise
- 2 tablespoons soy sauce
- 1 teaspoon toasted sesame seeds
- Flaky sea salt, to taste
- Pepper, to taste
Method
- Heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the minced ginger and garlic to the skillet and stir-fry for about 1 minute until fragrant.
- Add the kale and bok choy to the skillet, and cook, stirring occasionally, for 4-5 minutes until the greens are wilted and tender.
