Stir-Fried Winter Greens with Ginger and Garlic

Ingredients

  • 2 tablespoons sesame oil
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 4 cups kale, stems removed and leaves chopped
  • 3 cups baby bok choy, halved lengthwise
  • 2 tablespoons soy sauce
  • 1 teaspoon toasted sesame seeds
  • Flaky sea salt, to taste
  • Pepper, to taste

Method

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the minced ginger and garlic to the skillet and stir-fry for about 1 minute until fragrant.
  3. Add the kale and bok choy to the skillet, and cook, stirring occasionally, for 4-5 minutes until the greens are wilted and tender.
  4. Stir in the soy sauce and continue to cook for another minute to allow the flavors to meld.
  5. Remove from heat, sprinkle with toasted sesame seeds, and season with flaky sea salt and pepper to taste.
  6. Serve immediately while the greens are warm and vibrant.
