Springtime Chinese Chicken and Asparagus Broth

The combination of tender chicken, fresh asparagus, and fragrant ginger makes for a refreshing soup that celebrates the vibrant produce of the season. Ingredients

  • 4 cups chicken broth
  • 1 tablespoon sesame oil
  • 1 inch piece of ginger, peeled and sliced
  • 250 grams boneless, skinless chicken breast, cut into thin strips
  • 1 bunch asparagus, ends trimmed and cut into 1-inch pieces
  • 2 tablespoons soy sauce
  • 2 green onions, sliced
  • Flaky sea salt, to taste

Method

  1. In a large pot, heat the sesame oil over medium heat.
  2. Add the sliced ginger and sauté for 1-2 minutes until fragrant.
  3. Pour in the chicken broth and bring to a gentle boil.
  4. Add the chicken strips to the broth and simmer for 5-7 minutes until the chicken is cooked through.
  5. Add the asparagus and continue to simmer for another 3-4 minutes until the asparagus is tender-crisp.
  6. Stir in the soy sauce and adjust seasoning with sea salt to taste.
  7. Ladle the soup into bowls and garnish with sliced green onions. Serve hot.
