Springtime Chinese Chicken and Asparagus Broth

Ingredients
- 4 cups chicken broth
- 1 tablespoon sesame oil
- 1 inch piece of ginger, peeled and sliced
- 250 grams boneless, skinless chicken breast, cut into thin strips
- 1 bunch asparagus, ends trimmed and cut into 1-inch pieces
- 2 tablespoons soy sauce
- 2 green onions, sliced
- Flaky sea salt, to taste
Method
- In a large pot, heat the sesame oil over medium heat.
- Add the sliced ginger and sauté for 1-2 minutes until fragrant.
- Pour in the chicken broth and bring to a gentle boil.
- Add the chicken strips to the broth and simmer for 5-7 minutes until the chicken is cooked through.
