Spiced Apple Crumble Cake

Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup sour cream
- 2 medium apples, peeled and diced
- 1 tablespoon lemon juice
- 1/2 cup all-purpose flour (for crumble)
- 1/4 cup light brown sugar
- 1/4 cup unsalted butter, melted
- 1/4 teaspoon ground cinnamon (for crumble)
Method
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, combine 1 3/4 cups flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon. Set aside.
- In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Alternate adding the flour mixture and sour cream to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
- Toss the diced apples with lemon juice. Fold the apples into the batter until evenly distributed.
- Pour the batter into the prepared cake pan and spread evenly.
- For the crumble, mix 1/2 cup flour, brown sugar, melted butter, and 1/4 teaspoon cinnamon until crumbly. Sprinkle over the cake batter.
- Bake for 50 to 55 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
