Spiced Apple Crumble Cake

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup sour cream
  • 2 medium apples, peeled and diced
  • 1 tablespoon lemon juice
  • 1/2 cup all-purpose flour (for crumble)
  • 1/4 cup light brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 teaspoon ground cinnamon (for crumble)

Method

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, combine 1 3/4 cups flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon. Set aside.
  3. In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Alternate adding the flour mixture and sour cream to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  5. Toss the diced apples with lemon juice. Fold the apples into the batter until evenly distributed.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. For the crumble, mix 1/2 cup flour, brown sugar, melted butter, and 1/4 teaspoon cinnamon until crumbly. Sprinkle over the cake batter.
  8. Bake for 50 to 55 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
