Spanish Summer Gazpacho
This gazpacho is a classic Spanish dish perfect for a hot summer day. It's refreshing, healthy, and requires no cooking. Using ripe tomatoes and high-quality olive oil makes all the difference in this simple recipe.
Ingredients
- 6 ripe tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, seeded and chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons good quality olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon sea salt
- Black pepper, to taste
- 1/4 cup cold water
- Fresh basil leaves, for garnish
Method
- In a blender, combine the chopped tomatoes, cucumber, red bell pepper, red onion, and garlic.
- Add olive oil, red wine vinegar, sea salt, and black pepper to the blender.
- Pour in the cold water and blend until the mixture is smooth and well combined.
- Taste and adjust seasoning with more salt or vinegar if desired.
- Chill the gazpacho in the refrigerator for at least 30 minutes before serving.
- Serve cold, garnished with fresh basil leaves.
