Spanish-Style No-Cook Gazpacho Bowl

Ingredients
- 4 ripe tomatoes, roughly chopped
- 1 cucumber, peeled and diced
- 1 red bell pepper, seeded and chopped
- 1 small red onion, finely chopped
- 2 tablespoons sherry vinegar
- 1/4 cup extra virgin olive oil
- 1 clove garlic, minced
- 1/2 teaspoon smoked paprika
- Flaky sea salt, to taste
- Black pepper, to taste
- Fresh basil leaves, for garnish
Method
- In a large bowl, combine the tomatoes, cucumber, red bell pepper, and red onion.
- Add the sherry vinegar, extra virgin olive oil, garlic, and smoked paprika to the bowl. Stir to combine.
- Season with flaky sea salt and black pepper to taste. Mix well.
- Divide the gazpacho among four bowls.
