Spanish Almond Polvorones
Polvorones are a quintessential Spanish treat, particularly popular during special occasions and the spring season. These crumbly almond cookies are easy to make with just a few ingredients, perfect for a small-batch dessert indulgence.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1/2 cup caster sugar
- 1/2 cup unsalted butter, at room temperature
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- A pinch of salt
- Powdered sugar, for dusting
Method
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and caster sugar until light and fluffy. Add the vanilla extract and mix well.
- In another bowl, combine all-purpose flour, almond flour, ground cinnamon, and a pinch of salt. Gradually add the dry ingredients to the butter mixture, stirring until a crumbly dough forms.
- Using your hands, press the dough into small rounds about 1 inch in diameter and place them on the prepared baking sheet.
- Bake in the preheated oven for 15 to 18 minutes, or until the edges are lightly golden. Allow the cookies to cool on the sheet for a few minutes before transferring to a wire rack.
- Once fully cooled, dust the cookies generously with powdered sugar before serving.
