Spanish Almond Polvorones

Polvorones are a quintessential Spanish treat, particularly popular during special occasions and the spring season. These crumbly almond cookies are easy to make with just a few ingredients, perfect for a small-batch dessert indulgence.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup caster sugar
  • 1/2 cup unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • A pinch of salt
  • Powdered sugar, for dusting

Method

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and caster sugar until light and fluffy. Add the vanilla extract and mix well.
  3. In another bowl, combine all-purpose flour, almond flour, ground cinnamon, and a pinch of salt. Gradually add the dry ingredients to the butter mixture, stirring until a crumbly dough forms.
  4. Using your hands, press the dough into small rounds about 1 inch in diameter and place them on the prepared baking sheet.
  5. Bake in the preheated oven for 15 to 18 minutes, or until the edges are lightly golden. Allow the cookies to cool on the sheet for a few minutes before transferring to a wire rack.
  6. Once fully cooled, dust the cookies generously with powdered sugar before serving.
