Soft Snickerdoodle Pie

This soft snickerdoodle pie combines the beloved flavors of snickerdoodle cookies with the texture of a pie. Perfect for a cozy winter dessert.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons granulated sugar
  • 1 tablespoon ground cinnamon

Method

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish and set aside.
  2. In a large bowl, cream together the softened butter and 1 1/4 cups sugar until light and fluffy.
  3. Add the eggs and vanilla extract to the butter mixture and beat until well combined.
  4. In another bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Spread the dough evenly into the prepared pie dish.
  7. In a small bowl, mix the 3 tablespoons of sugar with the ground cinnamon. Sprinkle over the top of the dough.
  8. Bake for 25-30 minutes, or until the edges are lightly golden and the center is set. Allow to cool slightly before serving.
