Small-Batch Chewy Oatmeal Cookies
These chewy oatmeal cookies are perfect for when you want just a few to satisfy your sweet tooth. They're quick to make and deliciously comforting.
Ingredients
- 1/4 cup unsalted butter, softened
- 1/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 large egg
- 1/2 cup all-purpose flour
- 1 cup rolled oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Method
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Add the vanilla extract and egg to the creamed mixture and beat until well combined.
- In another bowl, mix together the all-purpose flour, rolled oats, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-14 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
