Slow-Cooked Hearty Beef Stew

Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef chuck, cut into 1-inch cubes
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 large carrots, sliced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 3 medium potatoes, peeled and diced
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • 1 cup frozen peas

Method

  1. Heat the olive oil in a large pot over medium-high heat. Season the beef chuck with salt and pepper.
  2. Brown the beef in batches, ensuring each piece is well-seared. Remove the beef and set aside.
  3. In the same pot, add the onion and garlic. Sauté until the onion is translucent, about 5 minutes.
  4. Add the carrots and continue to sauté for another 2 minutes.
  5. Stir in the beef broth, tomato paste, Worcestershire sauce, potatoes, thyme, and bay leaf. Bring to a simmer.
  6. Return the beef to the pot, ensuring it's covered with liquid. Cover with a lid and reduce the heat to low.
  7. Let the stew simmer on low heat for about 3 to 3 1/2 hours, or until the beef is tender.
  8. In the last 10 minutes of cooking, add the frozen peas and stir well.
  9. Remove the bay leaf, adjust seasoning if necessary, and serve hot.
