Slow-Cooked Beef Chili

Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons tomato paste
  • 28 ounces crushed tomatoes
  • 2 cups beef stock
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Heat the olive oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
  2. Remove the beef and set aside. In the same pot, add the onion and garlic. Cook until the onion is translucent, about 5 minutes.
  3. Stir in the chili powder, cumin, paprika, oregano, and cayenne pepper. Cook for 1 minute until the spices are fragrant.
  4. Add the tomato paste and cook for another 2 minutes, stirring constantly.
  5. Return the beef to the pot, then pour in the crushed tomatoes and beef stock. Stir well to combine.
  6. Bring the mixture to a simmer, then reduce heat to low. Cover and cook for 3-4 hours, stirring occasionally, until the beef is tender.
  7. Season with salt and black pepper to taste. Serve hot.
