Simple Vanilla Cupcakes
These vanilla cupcakes are easy to make and perfect for any occasion. The soft texture and classic buttercream frosting will satisfy your sweet cravings, especially on a chilly winter day.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened (for frosting)
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 2 tablespoons milk (for frosting)
Method
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the 1/2 cup butter and sugar until light and fluffy using an electric mixer.
- Add the eggs one at a time, mixing well after each addition. Stir in 1 teaspoon vanilla extract.
- Alternate adding the flour mixture and 1/2 cup milk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly among cupcake liners, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow to cool completely before frosting.
- To make the frosting, beat together the remaining 1/2 cup butter and powdered sugar until smooth. Add 1 teaspoon vanilla extract and 2 tablespoons milk, beating until light and fluffy.
- Spread or pipe the frosting onto the cooled cupcakes and serve.
