Simple Vanilla Cupcakes

These vanilla cupcakes are easy to make and perfect for any occasion. The soft texture and classic buttercream frosting will satisfy your sweet cravings, especially on a chilly winter day.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 2 tablespoons milk (for frosting)

Method

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the 1/2 cup butter and sugar until light and fluffy using an electric mixer.
  4. Add the eggs one at a time, mixing well after each addition. Stir in 1 teaspoon vanilla extract.
  5. Alternate adding the flour mixture and 1/2 cup milk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  6. Divide the batter evenly among cupcake liners, filling each about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow to cool completely before frosting.
  8. To make the frosting, beat together the remaining 1/2 cup butter and powdered sugar until smooth. Add 1 teaspoon vanilla extract and 2 tablespoons milk, beating until light and fluffy.
  9. Spread or pipe the frosting onto the cooled cupcakes and serve.
