This simple small-batch cheesecake is perfect for satisfying a sweet craving without the fuss of making a full-sized dessert. It's creamy, rich, and perfectly sized for a dinner date or a weekend treat.

Ingredients

  • 1/2 cup graham cracker crumbs
  • 2 tablespoons unsalted butter, melted
  • 6 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Method

  1. Preheat your oven to 325°F (160°C). Lightly grease two ramekins or small oven-safe dishes.
  2. In a small bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture evenly into the bottom of the prepared ramekins.
  3. In a medium bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  4. Add in the egg, vanilla extract, and a pinch of salt, and mix until fully incorporated.
  5. Pour the cream cheese mixture evenly over the crusts in the ramekins.
  6. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center slightly jiggles.
  7. Allow the cheesecakes to cool at room temperature, then refrigerate for at least 1 hour before serving.
