Simple Sheet-Pan Salmon

This sheet-pan salmon dinner is perfect for a healthy spring meal. The salmon is seasoned simply, allowing its natural flavors to shine, while asparagus and cherry tomatoes add a burst of freshness.

Ingredients

  • 4 salmon fillets, about 6 oz each
  • 2 tablespoons olive oil
  • 1 pound asparagus, trimmed
  • 1 pint cherry tomatoes
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried dill
  • Salt, to taste
  • Pepper, to taste

Method

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the salmon fillets on the prepared baking sheet and drizzle with 1 tablespoon of olive oil.
  3. In a bowl, toss the asparagus and cherry tomatoes with the remaining 1 tablespoon of olive oil, minced garlic, lemon zest, lemon juice, dried dill, salt, and pepper.
  4. Arrange the asparagus and cherry tomatoes around the salmon on the baking sheet.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Serve the salmon with the roasted asparagus and cherry tomatoes.
