Simple Sheet-Pan Salmon
This sheet-pan salmon dinner is perfect for a healthy spring meal. The salmon is seasoned simply, allowing its natural flavors to shine, while asparagus and cherry tomatoes add a burst of freshness.
Ingredients
- 4 salmon fillets, about 6 oz each
- 2 tablespoons olive oil
- 1 pound asparagus, trimmed
- 1 pint cherry tomatoes
- 3 cloves garlic, minced
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried dill
- Salt, to taste
- Pepper, to taste
Method
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the salmon fillets on the prepared baking sheet and drizzle with 1 tablespoon of olive oil.
- In a bowl, toss the asparagus and cherry tomatoes with the remaining 1 tablespoon of olive oil, minced garlic, lemon zest, lemon juice, dried dill, salt, and pepper.
- Arrange the asparagus and cherry tomatoes around the salmon on the baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve the salmon with the roasted asparagus and cherry tomatoes.
