Simple Savory Fried Rice
Fried rice is a versatile dish that's perfect for using up leftover ingredients. This recipe focuses on creating a simple yet delicious version that will become a household favorite.
Ingredients
- 3 cups cooked white rice, chilled
- 2 tablespoons vegetable oil
- 3 large eggs, beaten
- 1 cup frozen peas and carrots, thawed
- 4 green onions, sliced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1/4 teaspoon white pepper
- Salt, to taste
Method
- Heat 1 tablespoon of the vegetable oil in a large non-stick skillet over medium-high heat.
- Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the thawed peas and carrots and cook for about 2 minutes until tender.
- Add the cooked rice to the skillet, breaking up any clumps with the back of a spoon. Stir-fry for about 5 minutes until the rice is heated through.
- Return the scrambled eggs to the skillet and stir to combine with the rice and vegetables.
- Add the sliced green onions, soy sauce, sesame oil, and white pepper. Stir well to combine all the ingredients.
- Taste and adjust seasoning with salt if needed. Serve hot.
