Simple Pot Roast

Ingredients
- 3 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, sliced
- 4 cloves garlic, minced
- 3 cups beef broth
- 2 tablespoons tomato paste
- 1 pound carrots, peeled and cut into chunks
- 1 pound potatoes, peeled and cut into chunks
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 bay leaf
Method
- Preheat your oven to 300°F (150°C).
- Season the beef chuck roast with salt and black pepper on all sides.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 4 minutes per side. Remove from pot.
- In the same pot, add onion and garlic, sautéing until softened, about 5 minutes.
- Add beef broth, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaf. Stir to combine.
- Return the roast to the pot, submerging it in the liquid. Add carrots and potatoes around the roast.
- Cover the pot with a lid and transfer to the preheated oven. Cook for approximately 3 hours, or until the meat is fork-tender.
- Remove from oven and let it rest for 10 minutes before serving. Discard bay leaf.
