Simple Pot Roast

Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 pound carrots, peeled and cut into chunks
  • 1 pound potatoes, peeled and cut into chunks
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf

Method

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef chuck roast with salt and black pepper on all sides.
  3. Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 4 minutes per side. Remove from pot.
  4. In the same pot, add onion and garlic, sautéing until softened, about 5 minutes.
  5. Add beef broth, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaf. Stir to combine.
  6. Return the roast to the pot, submerging it in the liquid. Add carrots and potatoes around the roast.
  7. Cover the pot with a lid and transfer to the preheated oven. Cook for approximately 3 hours, or until the meat is fork-tender.
  8. Remove from oven and let it rest for 10 minutes before serving. Discard bay leaf.
