Simple Grilled Chicken with Spring Vegetables

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 bunch asparagus, trimmed
  • 2 red bell peppers, sliced
  • Flaky sea salt, to taste
  • Ground black pepper, to taste

Method

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together the olive oil, dried thyme, and garlic powder. Season the chicken breasts with the mixture, ensuring they are evenly coated.
  3. Season the asparagus and red bell peppers with a little olive oil, salt, and pepper.
  4. Place the chicken breasts on the grill and cook for about 6-7 minutes on each side, or until fully cooked through and the internal temperature reaches 165°F (75°C).
  5. While the chicken is grilling, add the asparagus and bell peppers to the grill. Cook for about 5-7 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. Remove the chicken and vegetables from the grill. Let the chicken rest for a couple of minutes before serving. Slice the chicken and serve with the grilled vegetables.
