Simple Fried Rice
Fried rice is a versatile and comforting dish that comes together quickly. Perfect for using up leftover rice and vegetables, it's a go-to meal for busy weeknights.
Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 3 cups cooked white rice, cooled
- 2 large eggs, beaten
- 3 tablespoons soy sauce
- 2 teaspoons sesame oil
- 2 green onions, sliced
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the diced onion and cook until softened, about 3 minutes.
- Add the minced garlic and stir for 1 minute until fragrant.
- Add the peas and carrots to the skillet, cooking for another 2 minutes until heated through.
- Push the vegetables to one side of the skillet and add the remaining tablespoon of oil to the empty side.
- Pour the beaten eggs into the skillet, scrambling them until just set, then mix them with the vegetables.
- Add the cooled rice to the skillet, breaking up any clumps with a spatula. Stir and cook for 3 minutes until the rice is heated through.
- Pour the soy sauce and sesame oil over the rice, stirring well to combine. Stir in the sliced green onions, and season with salt and pepper to taste.
- Serve the fried rice hot, garnished with additional green onions if desired.
