Simple Chicken Stir-Fry
This chicken stir-fry is perfect for a quick weeknight meal or a casual weekend dinner. It's simple, delicious, and made with ingredients you probably already have in your pantry.
Ingredients
- 2 tablespoons vegetable oil
- 1 1/2 pounds boneless chicken thighs, cut into 1 inch pieces
- 1 medium onion, sliced
- 2 bell peppers, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- 1/2 cup chicken broth
- 1 tablespoon honey
- Flaky sea salt, to taste
- Black pepper, to taste
- Cooked rice, for serving
Method
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the chicken pieces to the skillet and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove the chicken and set aside.
- In the same skillet, add the onion, bell peppers, and garlic. Sauté until the vegetables are tender, about 4-5 minutes.
- In a small bowl, whisk together the soy sauce, cornstarch, chicken broth, and honey until smooth.
- Return the chicken to the skillet, then pour the soy sauce mixture over everything. Stir to combine and cook until the sauce thickens, about 2-3 minutes.
- Serve the stir-fry over cooked rice.
