Simple Chicken Stir-Fry

This chicken stir-fry is perfect for a quick weeknight meal or a casual weekend dinner. It's simple, delicious, and made with ingredients you probably already have in your pantry.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 1/2 pounds boneless chicken thighs, cut into 1 inch pieces
  • 1 medium onion, sliced
  • 2 bell peppers, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 1/2 cup chicken broth
  • 1 tablespoon honey
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • Cooked rice, for serving

Method

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the chicken pieces to the skillet and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove the chicken and set aside.
  3. In the same skillet, add the onion, bell peppers, and garlic. Sauté until the vegetables are tender, about 4-5 minutes.
  4. In a small bowl, whisk together the soy sauce, cornstarch, chicken broth, and honey until smooth.
  5. Return the chicken to the skillet, then pour the soy sauce mixture over everything. Stir to combine and cook until the sauce thickens, about 2-3 minutes.
  6. Serve the stir-fry over cooked rice.
