Simple Beef Stew
This beef stew is a comforting dish perfect for a spring dinner. It's packed with tender beef and vegetables, making it a satisfying and nutritious meal.
Ingredients
- 2 tablespoons olive oil
- 1 1/2 pounds beef chuck, cut into 1-inch cubes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 large onion, chopped
- 4 cups beef broth
- 2 tablespoons tomato paste
- 3 carrots, sliced
- 3 potatoes, peeled and diced
- 2 stalks celery, sliced
- 1 bay leaf
- 1 teaspoon dried thyme
Method
- Heat olive oil in a large pot over medium-high heat.
- Season the beef with salt and pepper, then add it to the pot. Brown the beef on all sides, about 5 minutes.
- Add garlic and onion to the pot. Cook until the onion is translucent, about 3 minutes.
- Stir in the beef broth and tomato paste. Bring to a simmer.
- Add carrots, potatoes, celery, bay leaf, and thyme. Stir to combine.
- Reduce the heat to low, cover, and simmer for 2 hours, or until the beef and vegetables are tender.
- Remove bay leaf before serving. Adjust seasoning with salt and pepper if needed.
