Simple Baked Salmon with Vegetables

This baked salmon with vegetables is a simple, healthy meal that brings a touch of Korean flavor with minimal effort. Perfect for a cozy winter dinner, it's both nutritious and delicious.

Ingredients

  • 4 salmon fillets, about 6 oz each
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon gochujang
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, honey, and gochujang.
  3. Place the salmon fillets on the prepared baking sheet. Brush the soy sauce mixture evenly over each fillet.
  4. Arrange the broccoli florets and red bell pepper slices around the salmon on the baking sheet.
  5. Season the vegetables with flaky sea salt and black pepper to taste.
  6. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve the baked salmon with the roasted vegetables, drizzling any extra sauce from the baking sheet over the top.
