Sheet-Pan Salmon with Summer Vegetables
This sheet-pan salmon is perfect for a slow summer weekend. Fresh vegetables and a simple marinade make it a delicious and healthy choice.
Ingredients
- 4 salmon fillets, about 6 ounces each
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound asparagus, trimmed
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 tablespoon fresh dill, chopped
Method
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper.
- Place the salmon fillets on a lined sheet pan and brush them with the olive oil mixture.
- Arrange the asparagus, red bell pepper, and zucchini around the salmon on the sheet pan.
- Drizzle the remaining olive oil mixture over the vegetables.
- Roast in the preheated oven for about 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
- Sprinkle the chopped dill over the salmon and vegetables before serving.
