Sheet-Pan Salmon Dinner
This sheet-pan salmon dinner is a quick, healthy meal that's perfect for an autumn evening. With just a few pantry ingredients, you can have a nutritious and delicious dinner on the table in under an hour.
Ingredients
- 1 1/2 pounds salmon fillet, skin on
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound broccoli florets
- 1 red onion, sliced
- 1 lemon, sliced
- Olive oil, for drizzling
Method
- Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- Place the salmon fillet in the center of the sheet pan and drizzle with 2 tablespoons olive oil and 1 tablespoon lemon juice.
- In a small bowl, mix the minced garlic, dried oregano, salt, and black pepper. Rub this mixture evenly over the salmon.
- Arrange the broccoli florets and sliced red onion around the salmon. Drizzle with a little more olive oil, if desired.
- Add lemon slices on top of the salmon and around the vegetables for additional flavor.
- Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let rest for a few minutes before serving.
