Sheet-Pan Salmon Dinner

This sheet-pan salmon dinner is a quick, healthy meal that's perfect for an autumn evening. With just a few pantry ingredients, you can have a nutritious and delicious dinner on the table in under an hour.

Ingredients

  • 1 1/2 pounds salmon fillet, skin on
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound broccoli florets
  • 1 red onion, sliced
  • 1 lemon, sliced
  • Olive oil, for drizzling

Method

  1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Place the salmon fillet in the center of the sheet pan and drizzle with 2 tablespoons olive oil and 1 tablespoon lemon juice.
  3. In a small bowl, mix the minced garlic, dried oregano, salt, and black pepper. Rub this mixture evenly over the salmon.
  4. Arrange the broccoli florets and sliced red onion around the salmon. Drizzle with a little more olive oil, if desired.
  5. Add lemon slices on top of the salmon and around the vegetables for additional flavor.
  6. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from the oven and let rest for a few minutes before serving.
