Sheet-Pan Homestyle Meatloaf

This homestyle meatloaf is cooked on a sheet pan, making cleanup a breeze. It's a comforting meal perfect for any day of the week.

Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 medium carrots, cut into 1-inch slices
  • 4 medium potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 cup ketchup, for topping

Method

  1. Preheat the oven to 375°F (190°C) and line a large sheet pan with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, ketchup, salt, and pepper. Mix until just combined.
  3. Shape the meat mixture into a loaf and place it in the center of the prepared sheet pan.
  4. In a separate bowl, toss the carrots and potatoes with olive oil, thyme, salt, and pepper. Arrange them evenly around the meatloaf on the sheet pan.
  5. Bake for 40 minutes. Remove from the oven, spread the ketchup over the top of the meatloaf, and return to the oven.
  6. Continue baking for an additional 20-30 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C) and the vegetables are tender.
  7. Let the meatloaf rest for 10 minutes before slicing. Serve with the roasted vegetables.
