Ingredients

  • 2 racks baby back ribs (about 4 pounds)
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 cup barbecue sauce
  • Flaky sea salt, to taste

Method

  1. Preheat your oven to 275°F (135°C) and line a large sheet pan with aluminum foil.
  2. Remove the membrane from the back of the ribs. Pat them dry with paper towels.
  3. In a small bowl, mix together the olive oil, kosher salt, black pepper, smoked paprika, and garlic powder to form a paste.
  4. Rub the spice paste all over the ribs, covering both sides.
  5. Place the ribs on the prepared sheet pan, meat side up. Cover tightly with another piece of aluminum foil.
  6. Bake in the preheated oven for 2.5 hours until the ribs are tender.
  7. Remove the top piece of foil and brush the ribs generously with barbecue sauce.
  8. Increase the oven temperature to 425°F (220°C) and return the ribs to the oven, uncovered, for another 15-20 minutes until the sauce is caramelized.
  9. Remove from the oven and let the ribs rest for 5 minutes before cutting and serving.
