Ingredients

  • 5 pound bone-in ham
  • 1 cup brown sugar
  • 1/2 cup maple syrup
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 pounds baby potatoes, halved
  • 1 pound carrots, peeled and cut into 2-inch pieces
  • 1 pound Brussels sprouts, halved
  • 3 tablespoons olive oil
  • Salt and pepper, to taste

Method

  1. Preheat the oven to 325°F (163°C).
  2. Place the ham on a large sheet pan lined with foil.
  3. In a small bowl, mix together the brown sugar, maple syrup, Dijon mustard, and apple cider vinegar to make a glaze.
  4. Brush half of the glaze over the ham, covering it thoroughly.
  5. In a large bowl, toss the potatoes, carrots, and Brussels sprouts with olive oil, salt, and pepper.
  6. Arrange the vegetables around the ham on the sheet pan.
  7. Bake the ham and vegetables for 1 hour.
  8. After 1 hour, brush the remaining glaze over the ham.
  9. Return the sheet pan to the oven and bake for an additional 30 minutes, or until the ham is heated through and the vegetables are tender.
  10. Remove from the oven and let the ham rest for 10 minutes before slicing. Serve with the roasted vegetables.
