Savory Herbed Goat Cheese Soufflé

- 2 tablespoons unsalted butter, plus more for greasing
- 1/4 cup cornstarch
- 1 cup whole milk
- 4 ounces goat cheese, crumbled
- 3 large eggs, separated
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh thyme, chopped

Method
- Preheat the oven to 375°F (190°C). Grease four 6-ounce ramekins with butter and set aside.
- In a saucepan, melt the 2 tablespoons of butter over medium heat. Add the cornstarch, whisking constantly for 1 minute.
