Ingredients

  • 4 cups cauliflower florets, chopped into rice-sized pieces
  • 3 tablespoons olive oil, divided
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup broccoli florets, chopped
  • 2 large eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ground black pepper
  • 2 green onions, sliced
  • Flaky sea salt, to taste

Method

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until fragrant and softened, about 3 minutes.
  2. Add the red bell pepper and broccoli florets to the skillet, cooking until they start to become tender, about 4 minutes.
  3. Push the vegetables to the side of the skillet and add the remaining olive oil. Pour the eggs into the empty space and scramble until fully cooked.
  4. Mix the scrambled eggs with the vegetables. Add the cauliflower rice to the skillet, stirring to combine everything.
  5. Pour in the soy sauce, sesame oil, and ground black pepper. Stir-fry everything together until the cauliflower rice is tender, about 5-7 minutes.
  6. Adjust seasoning with flaky sea salt to taste. Garnish with sliced green onions before serving.
