This one-pan beef brisket is a family favorite, combining rich flavors with minimal cleanup. It's the perfect comfort dish for any night of the week.

Ingredients

  • 3 pounds beef brisket, trimmed
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup potatoes, diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme

Method

  1. Preheat your oven to 325°F (165°C).
  2. Heat the olive oil in a large oven-safe pan over medium-high heat.
  3. Season the brisket on all sides with salt and black pepper.
  4. Sear the brisket in the hot oil until browned on all sides, about 4-5 minutes per side. Remove from the pan and set aside.
  5. In the same pan, add the sliced onion and garlic. Sauté until the onion is soft and translucent, about 5 minutes.
  6. Add the beef broth, carrots, potatoes, Worcestershire sauce, and dried thyme to the pan. Stir to combine.
  7. Return the brisket to the pan, making sure it's partially submerged in the liquid.
  8. Cover the pan with a lid or aluminum foil and transfer it to the preheated oven.
  9. Bake for 3 to 3.5 hours, or until the brisket is tender and easily shredded with a fork.
  10. Remove from the oven and let it rest for 15 minutes before slicing.
