Ingredients

  • 4 bone-in pork chops, about 1 inch thick
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed
  • 1 lemon, cut into wedges

Method

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine the garlic powder, paprika, salt, and pepper. Rub the mixture evenly over both sides of the pork chops.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove chops and set aside.
  4. In the same skillet, add the halved baby potatoes. Season with salt and pepper. Cook for 5 minutes, stirring occasionally.
  5. Push the potatoes to one side of the skillet and return the pork chops to the pan. Add the green beans around the chops.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the pork chops are cooked through and the potatoes are tender.
  7. Remove from the oven and let the chops rest for 5 minutes. Serve with lemon wedges.
