One-Pan Hearty Beef Stew

Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 3 large carrots, sliced
  • 3 medium potatoes, peeled and cubed
  • 2 teaspoons dried thyme
  • 1 cup frozen peas
  • Fresh parsley, chopped, for garnish

Method

  1. Heat olive oil in a large oven-safe pan over medium-high heat.
  2. Season the beef with salt and black pepper, then sear in the pan until browned on all sides. Remove from the pan and set aside.
  3. In the same pan, add the chopped onion and sauté until translucent. Add the minced garlic and cook for another minute.
  4. Sprinkle the flour over the onions and garlic, stirring constantly to form a roux. Gradually add beef broth, stirring to prevent lumps.
  5. Stir in the tomato paste and Worcestershire sauce, then return the beef to the pan with any accumulated juices.
  6. Add the carrots, potatoes, and thyme. Bring to a simmer, cover, and transfer the pan to a preheated oven at 325°F (165°C).
  7. Cook in the oven for about 2 hours, or until the beef is tender and the vegetables are cooked through.
  8. In the last 10 minutes of cooking, add the frozen peas and return to the oven.
  9. Remove the stew from the oven, let it rest for 10 minutes, then garnish with chopped parsley before serving.
