One-Pan Barbecue Baby Back Ribs

Ingredients
- 2 racks baby back ribs
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 cup barbecue sauce
- 2 large sweet potatoes, cut into 1-inch cubes
- 2 red bell peppers, sliced
- 1 large red onion, cut into wedges
Method
- Preheat your oven to 300°F (150°C).
- In a small bowl, mix together the smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Rub the spice mixture all over the baby back ribs.
- Place the ribs on a large sheet pan and cover tightly with aluminum foil. Bake in the preheated oven for 2 hours.
- While the ribs are baking, prepare the vegetables. In a large bowl, toss the sweet potatoes, red bell peppers, and red onion with olive oil, salt, and black pepper.
- After 2 hours, remove the foil from the ribs and brush them generously with barbecue sauce.
- Arrange the prepared vegetables around the ribs on the same sheet pan. Increase the oven temperature to 400°F (200°C) and bake for an additional 20-30 minutes, or until the ribs are caramelized and the vegetables are tender.
- Remove from the oven and let the ribs rest for 10 minutes before slicing and serving with the roasted vegetables.
