One-Pan Barbecue Baby Back Ribs

These barbecue baby back ribs are the perfect weekend treat. They are cooked to perfection on a sheet pan with a medley of roasted vegetables. Enjoy a hearty, comforting meal that everyone will love.

Ingredients

  • 2 racks baby back ribs
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup barbecue sauce
  • 2 large sweet potatoes, cut into 1-inch cubes
  • 2 red bell peppers, sliced
  • 1 large red onion, cut into wedges

Method

  1. Preheat your oven to 300°F (150°C).
  2. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Rub the spice mixture all over the baby back ribs.
  4. Place the ribs on a large sheet pan and cover tightly with aluminum foil. Bake in the preheated oven for 2 hours.
  5. While the ribs are baking, prepare the vegetables. In a large bowl, toss the sweet potatoes, red bell peppers, and red onion with olive oil, salt, and black pepper.
  6. After 2 hours, remove the foil from the ribs and brush them generously with barbecue sauce.
  7. Arrange the prepared vegetables around the ribs on the same sheet pan. Increase the oven temperature to 400°F (200°C) and bake for an additional 20-30 minutes, or until the ribs are caramelized and the vegetables are tender.
  8. Remove from the oven and let the ribs rest for 10 minutes before slicing and serving with the roasted vegetables.
