One-Pan Baked Ham Dinner

This one-pan baked ham dinner is a hearty and satisfying meal, perfect for any night of the week. With tender ham and roasted vegetables, it's a dish the whole family will love.

Ingredients

  • 1 fully cooked bone-in ham (about 5 pounds)
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 pounds baby potatoes, halved
  • 1 pound carrots, peeled and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Preheat the oven to 325°F (165°C). Line a large sheet pan with aluminum foil for easy cleanup.
  2. In a small bowl, mix together the honey, Dijon mustard, and apple cider vinegar to create the glaze.
  3. Place the ham on the prepared sheet pan, flat-side down. Score the top of the ham in a diamond pattern and brush with half of the honey-mustard glaze.
  4. In a large bowl, toss the baby potatoes and carrots with olive oil, dried thyme, flaky sea salt, and black pepper. Arrange the vegetables around the ham on the sheet pan.
  5. Bake in the preheated oven for about 1 1/2 hours, basting the ham with the remaining glaze every 30 minutes, until the internal temperature of the ham reaches 140°F (60°C) and the vegetables are tender.
  6. Remove the pan from the oven and let the ham rest for 10 minutes before slicing. Serve the ham slices with the roasted vegetables.
