Nutty Oat Meatloaf
This vegetarian meatloaf combines wholesome oats and nuts for a hearty, comforting meal. It's perfect for autumn evenings and makes excellent leftovers.
Ingredients
- 1 cup rolled oats
- 1 cup walnuts, finely chopped
- 1 cup cooked lentils
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup carrots, grated
- 1/2 cup milk
- 2 large eggs
- 1/2 cup shredded cheddar cheese
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup ketchup
Method
- Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
- In a large bowl, combine the rolled oats and milk. Let them soak for about 5 minutes.
- Add the chopped walnuts, cooked lentils, chopped onion, minced garlic, grated carrots, eggs, cheddar cheese, tomato paste, soy sauce, dried thyme, salt, and black pepper to the oat mixture. Mix well until fully combined.
- Transfer the mixture into the prepared loaf pan and press down firmly to shape.
- Spread the ketchup evenly over the top of the loaf.
- Bake in the preheated oven for 60-70 minutes, or until the loaf is set and the top is golden brown.
- Allow the meatloaf to cool in the pan for about 10 minutes before slicing and serving.
