Ingredients

  • 3 pounds boneless pork shoulder, trimmed of excess fat
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 teaspoons ground allspice
  • 2 teaspoons ground juniper berries
  • 1 teaspoon ground black pepper
  • 1 tablespoon apple cider vinegar
  • 1 cup chicken broth
  • Flaky sea salt, to taste

Method

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Add the pork shoulder and sear on all sides until browned, about 4 minutes per side.
  3. Remove the pork from the pot and set aside. In the same pot, add sliced onion and minced garlic. Sauté until the onion becomes translucent, about 5 minutes.
  4. Stir in the ground allspice, juniper berries, and ground black pepper. Cook for an additional minute until the spices become fragrant.
  5. Return the pork to the pot. Add apple cider vinegar and chicken broth. Bring to a simmer.
  6. Cover the pot with a lid and transfer it to the preheated oven. Cook for 4 to 5 hours, or until the pork is tender and easily pulls apart with a fork.
  7. Remove the pot from the oven and let the pork rest for about 15 minutes. Shred the pork using two forks and season with flaky sea salt to taste before serving.
