Nordic Apple Cardamom Cake

This Nordic-inspired apple cardamom cake captures the essence of autumn with its warming spices and juicy apples. Perfect for a slow weekend bake, this cake requires minimal effort and fills your kitchen with comforting aromas. Serve it warm with a dollop of whipped cream or enjoy it plain with a cup of coffee.

Ingredients

  • 2 large apples, peeled, cored, and thinly sliced
  • 1 tablespoon lemon juice
  • 125 g unsalted butter, melted
  • 200 g granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 200 g all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • Flaky sea salt, to taste

Method

  1. Preheat the oven to 180°C (350°F) and grease a 9-inch springform pan.
  2. In a bowl, toss the sliced apples with lemon juice and set aside.
  3. In a large mixing bowl, whisk together the melted butter and granulated sugar until combined.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. In another bowl, sift together the flour, baking powder, ground cardamom, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Pour half of the batter into the prepared pan. Arrange half of the apple slices over the batter. Pour the remaining batter over the apples and top with the remaining apple slices.
  8. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before removing the springform. Sprinkle with flaky sea salt to taste before serving.
