These simple Nordic Almond Cardamom Cookies are infused with the warmth of cardamom and a hint of almond. Perfect for a beginner baker, this recipe requires minimal ingredients and effort, making it an ideal sweet treat during the chilly winter months.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sliced almonds

Method

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2 minutes.
  3. Add the egg and vanilla extract to the butter mixture and beat until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, ground cardamom, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the sliced almonds until evenly distributed in the dough.
  7. Scoop tablespoon-sized amounts of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  9. Remove from oven and let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
