Nordic Almond Cardamom Cookies

Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon ground cardamom
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sliced almonds
Method
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2 minutes.
- Add the egg and vanilla extract to the butter mixture and beat until well combined.
- In a separate bowl, whisk together the all-purpose flour, ground cardamom, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the sliced almonds until evenly distributed in the dough.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheets, spacing them about 2 inches apart.
