Moroccan Spiced Honey Cake

- 1 cup honey
- 3/4 cup warm water
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 cup granulated sugar
- 3/4 cup vegetable oil
- 2 large eggs
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Method
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, combine the honey and warm water. Stir in the ground cinnamon, ground ginger, and ground cloves, then set aside to cool slightly.
- In a large bowl, beat together the granulated sugar and vegetable oil. Add the eggs one at a time, mixing well after each addition.
- Mix the flour, baking powder, baking soda, and salt in a separate bowl. Gradually add the dry ingredients to the wet ingredients, alternating with the spiced honey mixture, beginning and ending with the flour mixture.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
