Mini Churro Bites with Cinnamon Sugar

Ingredients
- 1 cup water
- 2 tablespoons unsalted butter
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 cup granulated sugar, for coating
- 1 teaspoon ground cinnamon
- Vegetable oil, for frying
Method
- In a medium saucepan, combine water, butter, granulated sugar, and salt over medium heat. Bring to a boil.
- Reduce heat to low, add the flour, and stir vigorously with a wooden spoon until the mixture forms a ball, about 1 minute.
- Remove from heat and let cool for 5 minutes. Add the egg and vanilla extract, mixing until smooth and glossy.
- Heat about 2 inches of vegetable oil in a deep skillet over medium heat until it reaches 350°F.
- Transfer dough to a piping bag fitted with a star tip. Pipe 1-inch segments of dough into the hot oil, using scissors to cut the dough.
- Fry churro bites in batches, turning occasionally, until golden brown, about 2 to 3 minutes. Drain on paper towels.
- Mix 1/2 cup granulated sugar and ground cinnamon in a shallow dish. Roll the warm churro bites in the cinnamon sugar to coat.
